Dinner time continues to be a challenge for me. I had gotten pretty good at meal planning for a while. Now that we’re a family of four and I’m back at work, it’s become clear that I’m going to have some issues with dinner time… again.
By the time we all get home, I either need to feed baby girl or make dinner. I prefer to feed her. It’s my chance to get some time in with her for the day. When she’s not in need of the golden nectar and I need to cook, I miss her. Yep, she’s in the next room and I miss her. My son is a different case. He comes into the kitchen and talks to me and we can interact while I cook. I can get some time in with him while I’m in the process. That’s not the case with baby girl.
As much as we have going on in our life, I’m always looking for a way to make things easier. I got an email not too long ago from Progresso to try their new Recipe Starters Cooking Sauces. They are supposed to make meal time easier and faster. I was all about trying them out.
I have used a couple of the sauces.At first I made up my own recipe. Then I tried one of their recipes. My favorite so far is the fire roasted tomato sauce. I used it to make their parmesean chicken recipe. The cool thing is the recipe is attached to the can – makes it so easy. I was pretty excited about trying it out. Everything was simple enough and I had most of the ingredients on hand. The one ingredient I was missing was garlic. I don’t keep it in the house. I do have garlic powder though so I used that.
It went pretty smoothly. I was excited to try it out with my family. My son’s reaction was all the validation I needed. Without prompting he said, “it’s yummy”. WIN!!!!!!!!!

Hence why I’ve been cooking in bulk….but these are great suggestions!
They all look delicious! I also want to give ’em a try! That cookbook seems to be the perfect one for me as well, because honestly, I don’t like to spend a lot of time in the kitchen:)
